Today we are going to add to that list another delicious alternative: some rich pancakes made with oats, among whose ingredients we will also include banana (natural sweetenerinstead of traditional sugar, which will also give greater consistency to the final result).

We will add milk, egg and the essential yeast. This last product is the one that, mainly, differentiates the pancakes of the crepes (which do not include the impeller). If you prefer, you can replace the milk with a vegetable drink of your choice: oats, rice, almonds…

OAT PANCAKES RECIPE, STEP BY STEP

INGREDIENTS (makes about 6-8 pancakes)

  • 90 g oats (can be soft flakes or oat flour, depending on the desired texture)
  • 125 ml of milk (or vegetable drink).
  • 1 ripe banana
  • 1 large egg
  • 1/2 teaspoon baking powder (chemical baking powder)
  • 1/2 teaspoon ground cinnamon
  • 1 pinch of salt
  • 1/2 teaspoon vanilla extract (optional)
  • Oil or butter to grease the pan

ELABORATION:

-Place all the ingredients in a blender or food processor: oats, milk, banana, egg, baking powder, cinnamon, salt and vanilla.

-Mix until you obtain a smooth dough. If it is too thick, you can add a little more milk until you reach the desired consistency.

-Let the dough rest for 5 minutes so that the oats absorb some of the liquid and thicken.

Heat a nonstick frying pan over medium heat and lightly grease it with oil or butter.

-Pour a little of the batter into the pan to form a pancake (approximately 1/4 cup of batter per pan). pancake).

-Cook for 2-3 minutes, or until you see bubbles on the surface and the edges begin to peel away.

-Turn the pancake Carefully and cook for another 1-2 minutes until golden brown on both sides.

-Serves the pancakes hot and accompany them with your favorite ingredients: fresh fruits, honey, syrup, yogurt, peanut butter…
