David Muñoz reveals the DiverXO dish inspired by his one-year-old daughter Laia

UniverXO Dabiz is the new documentary series about David Muñoz which premiered on December 20 in Netflix with great acceptance. The Spanish chef with three Michelin stars has first person what his day-to-day life is like in the kitchen, his personal life and the ins and outs of his star restaurant, DiverXO, throughout its 18-year history. One of the star dishes that is part of the DiverXO experience is her daughter Laia’s recipe The little girl, born from his union with Cristina Pedroche, has already turned one year and five months old and is one of the great sources of inspiration for the best chef in the world, chosen by The Best Chef Awards for the third consecutive time.

It is a cocochas dish that Muñoz makes in the DiverXO kitchens. We have always had a dish that has to do with cocochas,” he says. “The one-year-old DiverXO Laia dish has a cococha with an Indian pilpil“, he assures. David admits that when he started giving the girl the cocochas “he was amazed” and recognizes that for him it is one of the best foods for a baby who is starting to eat: “First because the more you get used to it from a young age to a child, depending on the textures, the more normal they will become in the future. And secondly because cococha is from the world of fish, the easiest and most difficult texture for you to choke on, because when well cooked it melts in your mouth, it is super slippery and for me it has always been a fetish food.”

On more than one occasion he has revealed that he prepares succulent meals for his daughter based on russian steaks red prawns, candied cocochas or cheeks at low temperature. Both he and Cristina Pedroche always They have been very concerned about their daughter’s nutrition. and they decided to feed the girl from the age of six months with the Baby-Led Weaning method. A complementary feeding procedure for weaning baby which consists of the introduction of solid foods in their diet so they can eat autonomously with his own hands. “He doesn’t dislike anything. That said, Laia eats everything, of course… You see her eat and it’s amazing,” admits David, who considers it essential to get a boy or girl used to trying different textures and flavors from the age of six months because this creates a database in their brain and they grow up with a healthy relationship with the food.
