The recipe has its origin in the Sacromonte Abbeywhich is located in the neighborhood of the same name. Apparently, this cheap filling omelette was a classic on the school menu at this abbey. Another version says that for a meal with the city authorities the abbot had prepared some lambs to bake in the oven. But the night before, the meat was stolen. The thieves only left the waste (the offal). With all this he prepared an omelet… and he liked it.

Ingredients of the Sacromonte tortilla

  • Eggs (4-5)
  • Lamb cuts (3)
  • Lamb criadillas (2)
  • Salt
  • Flour
  • Extra virgin olive oil

Preparation of the Sacromonte tortilla

  1. We clean the criadillas and remove the surface cloth.
  2. We laminate criadillas and sesadas, and salt them.
  3. We coat in flour and fry in a pan with olive oil.
  4. Once fried, we chop them finely.
  5. We put them in a bowl with the eggs and beat.
  6. In a frying pan (preferably small and high so that it is juicy) add a little oil.
  7. Pour the mixture and set on both sides.
  8. We serve.
